Microgreens are plants that are harvested and consumed at an early developmental stage. They are often called "superfoods" as they contain much more nutrients and vitamins than mature plants, in some cases several times more.
Comparing microgreens to more mature greens, studies have shown that nutrient levels can be up to 40 times higher. Aswell as vitamins and minerals microgreens are also packed with antioxidants.
Microgreens are amazing eaten raw,
made into soups, juiced or blended into smoothies. Wheatgrass juice is a popular example of a juiced microgreen. However they can be just as easily incorporated into a variety of cold and warm dishes.
Its easy to see why Microgreens are so popular with chefs. Not only do they look beautiful, they are delicious and packed with flavour.
